Stir fry quinoa

2 cups quinoa cooked
1 pkg firm tofu
2 garlic cloves (I use one in my coconut oil to brown tofu)
3 carrots diced
2 stalks celery 
2 T soy sauce or bragg’s aminos
1 T mirin
2 T coconut oil
salt to taste

In a frying pan, brown garlic in coconut oil then, saute veggies for 5-7 minutes, add soy sauce, mirin, salt.  Then add the quinoa and saute for another 6-7 minutes.
Brown tofu in coconut oil with garlic.
 The veggies should still retain some crunch.  This made about 3 good size portions.

I love these! I upped the almond extract to 1 tsp, cuz I love almond!

Almond Joy Energy Bites

1 cup almonds
1 cup shredded unsweetened coconut
10-12 medjool dates
1/4-1/2 tsp almond extract (I used 1/4 only because my husband doesn’t like a strong almond flavor)
1 T coconut oil melted
2 T water
1/4 cup chocolate chips I used carob chips

In a food processor, mix the almonds and coconut until they are fine. Then add the dates, coconut oil and water and continue to pulse until you see a dough start to form. Roll into balls and place in the fridge to firm up.

I rolled mine kinda big, but you can do them smaller. :)

Ingredients for quinoa:

Banana slices
Chopped pecans
Fresh almond milk
Maple syrup
Squeeze of lime
Directions:
Place the water and the quinoa in a pan and bring to a boil.Turn heat to medium-low and simmer for 20 minutes until the water has absorbed and the quinoa is fluffy.
Prepare to toast the coconut by heating a cast iron skillet over medium-low heat for several minutes.
Add the coconut in an even layer in the pan (you can use dried coconut flakes or shredded dried coconut).
Cook on medium-low for 5 minutes, stirring frequently. When coconut is brown, transfer to a bowl.
Get together the rest of your toppings
Place a portion of quinoa in a bowl and top with toasted coconut, banana, pecans, almond milk, maple syrup and a squeeze of lime.Mix together and enjoy.

Evolution - ‘sweet greens and lemon’

I like Sweet greens,  I would buy this again. It has celery, apple, cucumber, spinach, celery,  romaine,  kale, lime, lemon, parsley, wheat grass, clover sprouts. 
It tastes good…how can it not?  Such an awesome combo of cold pressed goodness.  Its a mild sweet taste that I will be sure stock up on when #dailygreens isn’t having a sale.
So I give this juice a full 7.

So… having to judge this juice alone without comparing to its Pacific Northwest apple sister, it’s a bit underwhelming.  
I’m typically a huge fan of Granny Smith apples, they were my favorite until I got into Honey crisps this past fall…this is just all sour and all sweet, so much that I can’t tell I’m having apple juice. 
I definitely buy “Pinky’tude” again, but will skip “Granny’tude” in favor of wanting to enjoy the flavor of my juice, not blast my taste buds out of my mouth.

Immunity booster Orange and Ginger Smoothie Recipe
Serves: 2
Ingredients:2 medium oranges, peeled
1 half-inch knob of fresh ginger peeled
1/4 of an avocado
3 cups of romaine lettuce, washed
1 cup coconut water
handful of ice cubes

I also added in some extra protein powder because I need to recover for a 9:30am class tomorrow.
